Karl spends all day at work and theres not a hell of a lot to do in Christchurch, so I've been playing good little housewife. Well, to be honest, I've mostly been playing Red Dead Redemption, but there has been a little bit of housewifery.
I've been making Karl awesome lunches to take to work- yesterday he had a bacon sandwich, fresh baked corn bread muffins and a cream soda. BEST PRETEND WIFE EVER.
I also made these super delicious cheesecake cups for us to eat while he watches me play video games. They're blueberry with a chocolate shell; and they will blow your mind. Surprisingly easy recipe after the jump.
INGREDIENTS
- 1 1/2 cups milk
- 90g butter
- 1 packet Edmunds cheesecake mix*
- 1 can berries (fresh or frozen is fine too)
- 4 tbsp Hersheys chocolate fudge ice cream topping
METHOD
Make the cookie batter as instructed by the cheesecake box; but instead of pressing it into a tin divide the mixture into four and press each into a glass. You can use any vessel you like, really- be creative! I used beer glasses but I think brandy glasses would be good too. You want the base to be about 1cm thick.
Now make the cheesecake mix as per the instructions on the box; but add the canned berries after you whip it. Drain about half the fluid before adding it if you're using a can.
Pour the mix into your prepared vessels and leave in the fridge to set for about an hour.
Next, microwave the Hersheys for 1 minute and spread a few spoonfuls of the melted chocolatey stuff over the top of each cheesecake. Be careful not to break the surface of the cake.
Leave in the fridge overnight to set, and enjoy!
*Yeah, I use packet mix. Whatever. I have shit to do, I can't be fucking around measuring ingredients all day.
